...CAKES FOR MAMA...

baking cakes for mama's birthday before she swans off around the seas...chocolate was a natural choice...


...picked up these super cute candles at the corner shop and i love this recipe book called cupcakes by susannah blake, really beautiful pictures...


...i went for the basic cupcake recipe and added cocoa powder to it...starting off with 115g each of butter and caster sugar...


...beat together...


...add two medium eggs one at a time, not both like i did!


...then add 115g of sifted self-raising flour...


...mix...


...pour in 2 tablespoons of milk and 2 tablespooons of cocoa powder...


...mix throughtly unless you want a marble effect which can look good...


...spoon the mixture equally into 12 cases...


...left in the oven for 17 minutes on gas 4/ 180°C/ 350°F...


...leave to cool on a wire rack...looking good...smelling good...


...to make these cupcakes extra special i decided to make a chocolate ganache, this recipe is also in the fantastic book...i chopped up 100g of really dark chocolate and put it in a heatproof bowl...


...then i pour over 100ml of double cream that i have just heated on the hob (don't let your cream boil!)...


...leave it well alone for five minutes to melt the chocolate and then mix until smooth...leave it stand for 30-60 minutes before using so it ca cool down...


...i piped my ganache using a sandwiche bag with the corner cut off...


...then i covered them in walnuts and a dusting of icing sugar...


...finally the candles! had to wait nearly an hour for mum to come home as she had gone to the shops after work without telling anyone, it was incredible tempting to eat one of the cakes but they tasted even better after the wait!
